Ann's "Tour de Corn Energy Bars"

For more than a decade, the fine folks at the Nelson Memorial United Methodist Church have provided these fan-favorite treats for our Tour de Corn riders. One of the parishoners, "Miss Ann," started this TdC tradition when she tweaked an energy bar recipe she found years ago -- and the result: pure tasty energy!

1/2 cup sugar
1-1/2 cups light corn syrup
1/2 cup honey
1 cup peanut butter with nuts
1 cup old fashioned oats
4 cups Grape Nuts cereal or Nutty Nuggets cereal
1 cup sliced almonds
1 cup chopped dried apricot
1 cup dried cranberries

Line a 9"X13" baking pan with foil overlapping ends of pan. Coat foil with cooking spray.
Combine in large saucepan syrup, honey, sugar and peanut butter over medium heat.
Bring to boil and cook 1 minute, stirring constantly.
In large mixing bowl, put other ingredients, then pour syrup mixture over all. THIS WILL BE A VERY STIFF MIXTURE! Mix well and pour into prepared pan.
Using a glass or as mixture cools slightly, use palms of hands to press mixture down.
After cooling, cut into bars. (Miss Ann usually cuts 4 across and 6 down).
Use snack size baggies and place bars in these.
